Xylitol yields a very pleasant sweetness but is toxic to dogs, so take care if pets are present. Allulose remains soft and syrupy when chilled and is a favorite for a glossy finish.

Ingredients

  

  • 1/3 cup white wine vinegar
  • 1/2–3/4 cup erythritol or xylitol or allulose, to taste
  • 1 medium banana shallot very finely minced (about 50 g)
  • 1 rosemary sprig very finely chopped
  • 1 pound fresh cranberries

Instructions

 

  • Combine the white wine vinegar and the chosen sweetener in a saucepan over medium-low heat. Stir until the sweetener is dissolved and the mixture begins to simmer gently. Add the finely minced shallot, chopped rosemary and fresh cranberries. Reduce the heat to low, cover the pan leaving a small gap for steam to escape, and simmer for 20–25 minutes. Stir occasionally and cook until the mixture thickens and becomes syrupy.
  • Around minute 15 taste the relish and adjust the sweetness if desired. When the relish reaches your preferred consistency, remove from heat and let it cool. Store in an airtight container in the refrigerator for 4–5 days or freeze for up to three months.
