This sauce balances smoke, sweetness and heat. If you prefer mild, use only 1/2 a chipotle pepper or skip the chipotles entirely — the adobo sauce alone still gives great flavor without much heat.
Using two chipotle peppers yields a medium-high kick. Chipotles are simply smoked, fully ripe jalapeños, so their heat is in the same ballpark as a typical jalapeño (roughly 2,500–8,000 Scoville units). Adjust the peppers based on your audience: two for those who like spice, one for a crowd with mixed preferences, or none if you’re unsure.
How to make Sweet and Spicy Honey Chipotle Sauce
- Add all ingredients except the water to a blender or food processor and blend until smooth.
- Pour the blended sauce into a medium saucepan and bring it to a simmer.
- Rinse the blender with the 1/4 cup of water, pour that into the saucepan, and stir to combine.
- When the sauce simmers, reduce heat to medium and let it simmer gently for 3–4 minutes.
- Remove from heat and let cool a couple of minutes before using.

- ¼ c honey
- 2 chipotle peppers in adobo
- ¼ c adobo sauce from peppers
- ¼ tsp liquid smoke
- 2 garlic cloves, microplaned or minced
- 1 tsp apple cider vinegar
- ½ tsp ground black pepper
- ¼ tsp salt
- ¼ c water
