Winter has arrived and the holidays are just around the corner. This festive Winter Wonderland Cake is a delightful addition to your holiday spread — eye-catching, whimsical, and delicious. Guests will love the whimsical decorations and the light, fluffy vanilla layers inside.

Planning and making this cake took time, but most components can be prepared ahead. Marshmallow snowmen, cone trees, cake layers and frosting can all be made in advance so assembly on the serving day is quick and stress-free.

Fluffy Vanilla Cake Layers

The cake layers are a classic vanilla made from scratch. The recipe yields a light, tender crumb thanks to the creaming method: beat butter and sugar until fluffy, add eggs one at a time, then alternate dry ingredients with buttermilk. Taking care to add dry ingredients and buttermilk in stages prevents the batter from splitting or becoming overworked, which keeps the cake soft.

Although the method involves a few more steps than a simple muffin-style batter, the result is worth it: moist, fluffy layers that stack nicely for a three-layer 8-inch cake.

Wintery Blue and White Frosting

The frosting is a silky vanilla buttercream. I left some streaks of white in the blue-tinted frosting for a soft, marbled winter effect rather than a solid uniform color. Use a bench scraper and offset spatula to smooth sides and top for a professional finish.

Sugary Snow Glaze

The snow or icicle drip is a simple glaze made from powdered sugar and milk. If you prefer a thicker snowy drip, warm marshmallow fluff until pourable and use that instead for a dense, snow-like effect that clings to the sides.

Marshmallow Snowmen

Marshmallow snowmen are an easy and charming decoration. Stack three marshmallows on a skewer, use royal icing to attach a mini candy hat (for example, a Reese’s cup on a chocolate coin), and add facial features and buttons with gel food coloring applied by toothpick. Thin strips of pull-apart Twizzlers make quick scarves.

Stand the snowmen upside down while the hat dries if you find it slipping — this keeps the hat in place while adhesive sets.

Sugar Cone Christmas Trees

Sugar-cone trees are my favorite detail. Use a star piping tip to build piped stars from the base of the cone up toward the tip. I used two different star tips to create varied textures. One tree was coated with frosting and rolled in sparkling sugar for extra shimmer.

Decorate the cones with sanding sugar, nonpareils, snowflake sprinkles, and small sugar pearls to complete the winter look. Arrange the trees on top of the frosted cake and finish piping small stars at the tips.

For a finished presentation, scatter white nonpareils, sanding sugar, and snowflake sprinkles across the top. I also lined the base with shredded coconut for a snowy base and topped the edge with blue and white pearl candies for a festive border.

Ingredients

Vanilla Cake Layers:

  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • ¼ teaspoon baking soda
  • 1 teaspoon salt
  • 1½ cups unsalted butter, room temperature
  • 2¼ cups granulated sugar
  • 4 large eggs, room temperature
  • 1 tablespoon vanilla extract
  • 1½ cups buttermilk, room temperature

Marshmallow Snowmen:

  • Regular marshmallows
  • Wooden skewers or lollipop sticks
  • Royal icing
  • Mini candy cups and chocolate coins for hats
  • Black and orange gel food colouring
  • Pull-apart Twizzlers
  • Toothpicks

Christmas Trees:

  • Large and small sugar ice-cream cones
  • Vanilla frosting (extra for piping)
  • White & blue sanding sugar
  • Snowflake sprinkles, nonpareils and sugar pearls
  • Blue gel food colouring

Vanilla Buttercream:

  • 1 cup unsalted butter, softened
  • 1 cup hi-ratio shortening
  • ⅛ teaspoon salt
  • 8 cups powdered sugar, sifted
  • ½ cup heavy whipping cream
  • 1 tablespoon vanilla extract
  • ½ teaspoon almond extract
  • Sky blue gel food colouring

Snow Drip & Additional:

  • 2 cups powdered sugar
  • 2–3 tablespoons milk
  • White sanding/sparkling sugar
  • Shredded coconut
  • White and blue pearl gumballs or sixlets
  • Powdered sugar for dusting

Instructions (Overview)

Vanilla Cake Layers

  1. Preheat oven to 350°F (177°C). Prepare three 8×2-inch cake pans with parchment and grease the sides.
  2. Sift and whisk together flour, baking powder, baking soda and salt.
  3. Cream butter and sugar until light and fluffy, about 3–4 minutes. Add eggs one at a time, then vanilla.
  4. Alternate adding dry ingredients (in thirds) and buttermilk (in two additions), starting and ending with dry. Mix just until combined and beat briefly until smooth.
  5. Divide batter between pans and bake 25–30 minutes or until a toothpick comes out clean. Cool 10 minutes in pans, then turn onto racks to cool completely.

Marshmallow Snowmen

  1. Thread three marshmallows onto a skewer. Use royal icing to glue a mini candy hat together (candy cup on a chocolate coin) and attach to the head.
  2. Use toothpicks dipped in gel colour to make eyes, mouth, nose and buttons. Wrap thin Twizzler strips as scarves. Stand upright while hats dry.

Sugar Cone Trees

  1. Spread a thin layer of frosting over cones. Roll one in sparkling sugar for extra shimmer.
  2. Fill piping bags with white and blue frosting (small star tip). Pipe stars from the base up, leaving the tip free for placement.
  3. Decorate with sanding sugar, nonpareils, snowflake sprinkles and sugar pearls.

Vanilla Buttercream

  1. Beat butter, shortening and salt until light. Gradually add powdered sugar, then heavy cream, vanilla and almond extract. Continue adding sugar and whip until light and fluffy.

Snow Drip

  1. Mix powdered sugar with milk until smooth. Adjust thickness to desired drip consistency.

Assembly

  1. Stack cake layers with about 1 cup frosting between each. Place the top layer upside down for a flatter top if desired.
  2. Crumb-coat the cake with a thin layer of buttercream and chill 30 minutes. Tint remaining frosting blue but leave streaks of white for a marbled look.
  3. Frost the cake with the blue-and-white buttercream, smoothing the sides and top.
  4. Pipe or drizzle the white snow glaze along the edge so it drips down the sides and spread the remaining glaze across the top. Sprinkle sanding sugar and nonpareils.
  5. Arrange the cone trees and finish piping small stars; place sugar pearls on the tree tips. Insert marshmallow snowmen into the cake.
  6. Dust the cake, trees and snowmen lightly with powdered sugar to create a snowfall effect. Optionally, cover the cake stand with shredded coconut and place blue and white pearl candies around the base.

Notes

* Cake layers can be made several days ahead and frozen tightly wrapped.
* Marshmallow snowmen and cone trees can be prepared a day ahead and stored in an airtight container at room temperature.
* You can double the frosting if you’d like extra for piping; alternatively, buy pre-made frosting for the trees to save time.
* If a snowman hat slips, balance the snowman upside down while the icing sets.
