Tips for This Week’s Meal Plan

  • Save a portion of Sunday’s chicken chili to build burrito bowls on Wednesday—quick and filling.
  • Make the balsamic vinaigrette on Monday and use it for side salads throughout the week to save time.
  • Choose russet potatoes for both potato soup and oven fries. If you have leftovers, turn them into a potato frittata for breakfast—add any bacon used as a garnish on the soup.
  • Cook extra Spanish rice on Tuesday so you can reheat it with Wednesday’s chili for an instant meal.
  • Prepare 2–3 extra sausage links when cooking Thursday’s dinner. Use some for Saturday’s pasta and save the rest for sandwiches.
  • No Instant Pot? Use a slow cooker for sausage and peppers: combine seared sausage with sautéed onions and peppers, garlic, and tomato sauce; cook on low 4–5 hours. Omit added broth. For Spanish rice, prepare plain rice on the stove if preferred.
