How To Make Pimento Cheese Dip:
- In a 4-cup or larger food processor, add softened cream cheese and mayo. Pulse until smooth and creamy.
- Add sliced green onion, seasoned salt, black pepper, green Tabasco if using, and the shredded Monterey Jack and sharp cheddar. Pulse until the mixture comes together but still has some texture—small cheese bits are desirable.
- Add the well-drained pimentos and pulse once or twice just to distribute them. You want visible flecks of red throughout. Serve immediately with crackers or vegetables, or chill until ready to serve.
How Long Does Pimento Dip Last?
Stored in an airtight container in the refrigerator, homemade pimento cheese will keep for up to 10 days. I store mine in the cheese drawer for best temperature control.

Instructions
