At this time of year many people search for easy, festive holiday appetizer recipes. These Apple Brie Roll Ups fit the bill — simple to make, elegant in presentation, and ready in minutes.
With just a handful of ingredients and minimal prep, they feel fancy (even though they’re wrapped in crescent roll dough). They’re best served warm right from the oven, so if possible bake them just before serving for the best texture and flavor.
How to make Apple Brie Roll Ups
This recipe uses just five main ingredients, each bringing a little “wow” to the finished bite:
Brie cheese, a crisp apple (Honeycrisp works wonderfully), honey, fresh thyme, and a tube of crescent roll dough.

Slice about half of a standard container of brie — roughly 4 ounces — into eight thin pieces.
Core and slice a Honeycrisp apple into eight wedges; any leftover apple makes a tasty snack while you work.
Separate the crescent roll triangles and lay them flat on your workspace.

Place one apple slice in the center of each triangle, top with a slice of brie, then drizzle with honey.

Finish with a few fresh thyme leaves, then roll each triangle up from the wide end to the point.

Place the rolled appetizers on a parchment-lined baking sheet, and sprinkle a few extra thyme leaves on top for aroma and color.
Bake in a preheated 375°F (190°C) oven for 14–16 minutes, or until the crescent dough is golden brown and puffed.

Remove from the oven and serve immediately while the cheese is melty and the apples are warm with a slight crisp.

Serve Apple Brie Roll Ups right away when they are still nice and warm
The contrast of soft, melty brie with slightly crisp, baked apple and a touch of honey makes each bite balanced and satisfying. Fresh thyme adds a subtle herbaceous note that lifts the flavors.
