Hello everyone!

What a beautiful day it is — the weather is perfect. I’m sitting on our new deck, listening to the birds and the sounds of nature. In this post I’ll share my favorite Amish cornbread salad recipe, so keep reading!

We had a blessed week. On Saturday evening my husband Daniel and I rode our bikes with Julia tucked into her carrier to the Wengerds’ home for a corn roast. We had previously bought tickets for the supper at our school auction and I’d been looking forward to the fellowship and to trying roasted corn. The evening was calm and lovely: a red checkered tablecloth covered a food-laden table, and nearby a small pond and trees made for a peaceful setting.

Friends who had purchased tickets joined us, and we gathered around the fire. Julia was delighted to sit beside Mom and Daddy in a pink camping chair made just her size. After a prayer of thanks we filled our plates. I was amazed at the variety of items grilled over the open fire — everything looked and tasted wonderful.

There were three kinds of meat to choose from: steaks, chicken breasts and drumsticks. Fresh breads, homemade barbecue sauce, ketchup and pepper mustard were served for sandwiches. Diced potatoes were marinated, skewered and grilled until tender. The roasted corn was a highlight — it had been grilled in the husks over the fire, giving the sweet kernels a subtle smoky flavor that was delicious.

One of my favorite dishes that evening was the cornbread salad Wanita Wengerd prepared. If you haven’t tried cornbread salad, it’s a must. It combines crumbled cornbread with fresh garden vegetables, then gets topped with cheese, bacon and a creamy dressing. Below I’ve included the recipe I use — feel free to adjust it to your taste.

After the main course some of the ladies and I made mountain pies. We spread cream cheese and pie filling between two slices of bread, then toasted the sandwich in a pie iron over hot embers until golden brown. Once the pie iron was opened we dusted the sandwiches with powdered sugar — a simple, sweet campfire treat.

About the tickets: our church holds a school auction every other year. People donate items — homemade goods, clothing, furniture, even bigger items like sandboxes or greenhouses — and proceeds benefit our school. Meal certificates and campout packages are commonly offered; the corn roast tickets we used were $23 per plate.

While writing this I had a small visitor — a hummingbird hovered nearby, curious about what I was doing. I love watching hummingbirds; their hovering and nimble flight never cease to amaze me, and their tiny nests and eggs are fascinating.

Below is the Amish cornbread salad recipe. It’s essentially three parts: cornbread, dressing and salad layers. Make it your own and enjoy!

🌽 Amish Cornbread Salad Ingredients

CORNBREAD

  • 1 cup milk
  • 1/2 cup shortening
  • 2 tablespoons brown sugar
  • 1 egg, beaten
  • 1 cup flour
  • 1 cup cornmeal
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

DRESSING

  • 1 1/2 cups salad dressing
  • 1 cup sour cream
  • 1/2 package Ranch dressing mix

SALAD

  • 1/4 cup pinto beans
  • 1 1/2 cups corn
  • 1 cup tomatoes, diced
  • 1/4 cup onion, chopped
  • 1/2 cup pepper, chopped
  • 1 cup bacon, cooked and crumbled
  • 1 cup cheese, shredded

📋 Cornbread Salad Instructions

Making Amish Cornbread Salad - Amish365
  1. Preheat oven to 350°F. Mix the cornbread ingredients in a bowl and pour the batter into a greased 9×9 square pan.
  2. Bake about 30 minutes, or until a toothpick inserted in the center comes out clean.
  3. Allow the cornbread to cool completely.
  4. Crumble the cooled cornbread and place half of it in a 9×13-inch container.
  5. Mix the dressing ingredients (salad dressing, sour cream and Ranch mix) and spread half of this dressing over the cornbread layer.
  6. In separate bowls prepare the salad ingredients: beans, corn, tomatoes, onion, pepper, bacon and cheese.
  7. Spread half of each prepared ingredient over the dressing, then repeat the layers with the remaining cornbread, dressing and salad ingredients.
  8. Cover and refrigerate until served. Enjoy!

Ingredients

  

Cornbread

  • 1 cup milk
  • ½ cup shortening

Salad

Instructions

 

  • Mix the cornbread ingredients together in a bowl and pour batter into a square 9 X 9 greased pan.
  • Bake at 350 for 30 minutes or until a toothpick in the middle comes out clean.
  • Cool.
  • Crumble and put half of it in a 9 X 13 Tupperware.
  • Mix and spread half of this dressing over the cornbread.
  • Prepare the remaining ingredients in separate bowls so they’re ready to layer.
  • Spread half of each ingredient over the dressing, then repeat layers with remaining cornbread, dressing and salad items.
  • Refrigerate until ready to serve. Delicious!
