For a healthy, comforting breakfast that comes together in minutes, make this Almond Chai Oatmeal!

It’s a gloomy, windy day here in Southern California — the kind of weather that makes a warm, comforting breakfast especially appealing. During winter I often started the day with a bowl of oatmeal, and even as I look forward to lighter spring and summer dishes, I still miss those cozy mornings.
Why not combine your morning caffeine with breakfast by using chai tea in your oats? While coffee in oatmeal is delicious, chai brings gentle spice without coffee’s bitterness and pairs beautifully with a dash of cinnamon. A little maple syrup provides natural sweetness without overpowering the spices. Chopped roasted almonds add a pleasant crunch and boost the protein to keep you satisfied longer.
When brewing your chai tea, steep it a bit longer than usual so the flavor stands out in the oatmeal. If you use tea bags, consider using two for the 3/4 cup of tea to ensure a bold, full-bodied chai flavor.

If you want an even warmer flavor, add a touch of vanilla extract to the oats. It’s a simple tweak that lifts the aroma and rounds out the spice notes.
