Why I love this recipe
This salad is incredibly versatile and easy to adapt. Swap the protein, add more beans or veggies, or change the dressing and chips — it still comes out delicious. It’s family-friendly and simple to customize so everyone can build a bowl they’ll love.
The crunch of the Doritos, the creaminess of the dressing, and the bold taco seasoning make every bite comforting without feeling heavy.
Ingredients
Every ingredient contributes to the balance of zesty, creamy, crunchy, and savory flavors in this taco salad.

- Protein & seasoning: lean ground beef, taco seasoning, water
- Greens & veggies: romaine or iceberg lettuce, pinto (or black) beans, diced tomatoes, corn, red onion, and jalapeños (seeds removed)
- Cheese & chips: shredded cheddar cheese and crushed Nacho Cheese Doritos
- Toppings: black olives, fresh cilantro, sour cream, lime wedges
- Dressing: cilantro-lime ranch or avocado-lime ranch
Step by step
- Brown the ground beef over medium heat in a skillet until no longer pink. Drain any excess grease.
- Stir in the taco seasoning and water, then simmer until the mixture thickens. Remove from heat and let cool slightly.
- In a large bowl, combine the chopped lettuce, rinsed beans, shredded cheese, diced tomatoes, corn, diced red onion, jalapeños, and sliced black olives.

- When the beef has cooled enough, add it to the salad bowl along with half of the crushed Doritos and the dressing. Toss to coat evenly.
- Right before serving, sprinkle the remaining crushed Doritos on top and finish with a dollop of sour cream, chopped cilantro, and lime wedges.
Tips for Best Results
- Use fresh or frozen corn for the best texture; canned corn can be too soft and may add extra moisture.
- Add the Doritos just before serving to keep them crunchy and prevent sogginess.
- Choose a dressing you enjoy. Store-bought cilantro-lime ranch works well, or blend avocado, lime juice, cilantro, a little oil, and seasonings for a homemade creamy dressing.

Variations
This salad adapts easily: use ground turkey for a lighter version, substitute black beans for pinto beans, or try a different cheese. You can also swap chip flavors—Cool Ranch or Spicy Nacho Doritos are tasty alternatives to Nacho Cheese.
Storage
For best texture, serve this salad fresh. Leftovers can be stored without dressing or chips in an airtight container in the refrigerator for up to 3 days. Add dressing and chips only when ready to eat to keep everything crisp.
