2 tsp pumpkin pie spice
½ tsp instant coffee granules
¼ tsp baking powder
½ tsp baking soda
¼ tsp salt
1 egg
1 cup pumpkin puree
¼ cup light brown sugar
¼ cup white sugar
6 Tbsp butter, melted (or plant-based butter for vegan)
½ cup walnuts, chopped (optional)

8″ x 4″ loaf pan
Parchment paper
Mixing bowls
Whisk
Spatula

Instructions

1) Preheat the oven to 350°F (175°C) and line an 8″ x 4″ loaf pan with parchment paper.

2) In a bowl, whisk together the flour, pumpkin pie spice, instant coffee granules, baking powder, baking soda and salt until evenly combined.

3) In a separate bowl, whisk the egg, pumpkin puree, brown sugar, white sugar and melted butter until smooth.

4) Fold the dry ingredients into the wet ingredients with a spatula, mixing just until combined. Avoid overmixing.

5) Gently fold in the chopped walnuts if using.

6) Pour the batter into the prepared loaf pan and bake for 55–60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs and the top is golden brown.

7) Allow the bread to cool to room temperature before slicing. Serve plain or spread with butter.
