Ingredients
- 1 lb ground meat
- 1 cup peeled and diced potato (about 2 small russet potatoes)
- 1/2 yellow onion
- 2 garlic cloves
- 1 egg
- 1 T dried parsley
- 1 tsp dried oregano
- 1 tsp paprika
- 1/2 tsp dried rosemary
- 1 tsp salt
- 1 tsp black pepper
Instructions
- Preheat oven to 375°F (190°C).
- In a food processor fitted with an S-blade or in a high-powered blender, add the potato, onion, and garlic. Process until smooth. If there is excess liquid, strain it through a clean towel and discard the liquid.
- In a medium mixing bowl, combine the ground beef, egg, pureed potato mixture, and seasonings. Mix thoroughly—use a spoon or your hands to combine everything evenly.
- Grease a 14″ cast-iron skillet or a glass baking dish.
- Form the mixture into balls (they will shrink slightly). Using about 2–3 tablespoons per meatball yields a good size. Arrange them nearly touching in the pan.
- Bake for about 20 minutes, or until cooked through. Cooking time varies with meatball size, so check for doneness—using a meat thermometer is helpful.
- After the meatballs are cooked, pour spaghetti sauce over them in the pan and heat together before serving. If you used a cast-iron skillet, you can warm the sauce on the stovetop.
