I planned to post these fritters later this week, but the Vegan Mofo Iron Chef Chickpea Challenge closes tomorrow, so here they are—Mofo Post 8! These apple chickpea flour fritters are so good you might skip potato fries for a while.

Apple slices are coated in a thick, spicy chickpea batter and fried to a crisp golden brown. I also fried some broccoli florets in the same batter for a savory contrast.
I also made a chilla for breakfast today (no photos) — a savory chickpea batter crepe that can be thickened to resemble an omelet or made thin like a crisp crepe, flavored with Indian spices and filled with scallions, onions, bell peppers, cilantro, tomatoes or other vegetables. I’ll share that recipe soon. These apple fries are deep-fried; I’ll try a baked version another time to make them lighter.

Ingredients
- 4 Tablespoons chickpea flour (garbanzo bean flour/besan)
- 1 Tablespoon oats (optional; omit for strict gluten-free)
- 1 Tablespoon rice flour
- 2/3 teaspoon salt, or to taste
- Pinch of turmeric
- Pinch of asafetida (hing), optional
- 1 teaspoon oil
- 1/2 teaspoon chili flakes (or 1 green chili), to taste
- 1/4 teaspoon cumin powder
- 1/4 teaspoon carom seeds (ajwain)
- 1/2 inch piece of ginger
- 3–4 mint or cilantro leaves
- 4–5 Tablespoons water (adjust as needed)
- 1 apple, chopped into long slices/fries
- Oil for frying
Instructions
- Combine all ingredients except the apple and frying oil in a blender.
- Blend to a thick, pasty batter, adjusting water and chickpea flour to achieve a coating consistency. (For a simpler batter, mix chickpea flour with 1/2 tsp garam masala, salt and pepper or use a favorite onion fritter batter.)
- Toss apple slices in the batter to coat evenly.
- Fry in medium-hot oil for 2–3 minutes, turning occasionally, until the batter turns golden brown and crisp.
- Serve hot with ketchup or cilantro chutney. Sprinkle chaat masala or rock salt and red chili powder for extra flavor.
