Do I have to use alcohol in this drink?

No — you don’t have to. Substitute the peach vodka with about 3 tablespoons of peach puree or 1/4 cup of frozen peaches. Replace the Malibu rum with 2 tablespoons of coconut cream for a non-alcoholic version that keeps the tropical flavor.

Ingredients

Serves: 2 (8 oz glasses)

• 1/2 cup frozen pink lemonade concentrate (from a 12 oz can)
• 3 oz peach vodka
• 2 oz Malibu rum
• 1/2 cup vanilla ice cream
• 1/2 cup frozen strawberries
• 1 cup crushed ice

Instructions

• Place the pink lemonade concentrate, peach vodka, Malibu rum, vanilla ice cream, frozen strawberries and crushed ice into a blender.
• Blend on high until the mixture is smooth and creamy.
• Pour into chilled glasses and top with whipped cream if desired.
• Serve immediately and enjoy!
