I’ve made these preserves along with other on-plan jellies like Sugar Free Blackberry Jelly and Sugar Free Cinnamon Jelly to build a supply of healthier spreads for the pantry. Homemade preserves are economical, let you control the ingredients, and make a healthier alternative to many store-bought options.

One of our family’s favorite activities is fruit and berry picking. A day at the orchard or berry patch becomes a memorable, affordable outing filled with family time. Last year I introduced Rick to the tradition—he was skeptical at first, but we ended up bringing home about 10 pounds of fresh strawberries. We’ll be taking some of the grandkids next time.

Making these preserves evokes warm memories of canning with family members. They’re versatile—warmed slightly they make a lovely pancake syrup and a fruit topping for the Tummy Tucking Ice Cream from the Trim Healthy Mama book. I’ve also used them on Muffin in a Bowl, in a Jelly-Style Greek Yogurt Swirl, and on Cottage Style Toast. They can also be added to Sugar Free Mini Danishes for a fruity filling.

Sugar Free Peach Preserves

Fresh and fruity sugar free peach preserves made with simple ingredients.
Ingredients
  • 1 fresh peach, pitted and chopped (or 1 cup frozen peaches, chopped)
  • 1 cup water, divided
  • 2 tsp gelatin
  • 1/4 cup sweetener (I used Pyure Organic Stevia All Purpose Sweetener)
Instructions
  1. Combine the gelatin with 1/2 cup of water and allow it to bloom.
  2. Place the peaches and the remaining 1/2 cup water in a heavy-bottomed saucepan and bring to a boil.
  3. Boil for about 5 minutes to soften the fruit.
  4. Optional: Puree the fruit with an immersion blender for a smoother texture or leave in chunks if you prefer.
  5. Add the sweetener and stir until dissolved.
  6. Stir in the bloomed gelatin and simmer for about 5 minutes to fully incorporate.
  7. Ladle the mixture into jars, leaving 1″ headspace. Allow to cool slightly, cap the jars, and store in the refrigerator.

These preserves have not been processed in a hot water canner or pressure cooker. Store refrigerated and consume within a reasonable timeframe.
