How to make homemade caramel?
- 1 cup butter
- 2 cups brown sugar
- 1 cup corn syrup
- 1 can sweetened condensed milk
- 1 teaspoon vanilla extract
In a medium saucepan over medium-high heat, melt the butter. Add the brown sugar, corn syrup, and sweetened condensed milk, stirring with a wooden spoon to combine. Cook the mixture over medium-high heat, stirring constantly, until the caramel reaches 235–240°F (soft-ball stage) on a candy thermometer—about 14 minutes. If you don’t have a thermometer, cook approximately 14 minutes while stirring. Remove from heat and stir in the vanilla.

- Begin by melting the caramels in a microwave-safe glass bowl, stirring every 20–30 seconds until smooth. If using homemade caramel, warm it gently until it’s pliable. In a separate microwave-safe bowl, melt the white chocolate chips, stirring frequently to prevent overheating.
- Set up an assembly line with parchment-lined pans. Dip half of each pretzel into the melted caramel, letting excess drip off, then place the pretzels on the parchment to cool slightly.
- Dip the same half of each pretzel into the melted white chocolate, return them to the parchment, and let them begin to set.
- While the white chocolate is still tacky, sprinkle the dipped portion with cinnamon sugar so it adheres as the chocolate firms up.
- Let the pretzels cool completely until the caramel and chocolate are set. Then transfer them to a large bowl for serving or package them in cellophane bags for gifts.
