Happy September, friends! September is my favorite month—crisp mornings, warm afternoons, and cozy evenings make it perfect for baking. The air smells like autumn, leaves are turning, and pumpkins are everywhere. These Kodiak Pumpkin Muffins capture all of that cozy fall flavor.

Ingredients
- 2 eggs
- 1/2 cup unsweetened almond milk
- 1 teaspoon vanilla
- 3/4 cup pure pumpkin
- 1 1/3 cup Kodiak Cakes Protein Packed Buttermilk Mix
- 1 teaspoon baking powder
- 1 teaspoon pumpkin spice
- 1/2 tablespoon brown sugar
- 1/2 teaspoon cinnamon
How to make Kodiak Pumpkin Muffins
- Preheat the oven to 350°F (175°C). Spray a standard 12-cup muffin tin with nonstick spray; I recommend skipping liners so the muffins brown nicely.
- In a bowl, whisk the eggs with the almond milk. Stir in the pumpkin and vanilla until combined.
- Add the Kodiak Cakes mix, baking powder, and pumpkin pie spice. Stir until just combined—don’t overmix.
- Divide the batter evenly among the 12 muffin cups.
- In a small bowl, combine the brown sugar and cinnamon, then sprinkle a bit over each muffin for a sweet topping.
- Bake for about 20 minutes, or until a toothpick inserted in the center comes out clean. Let cool in the pan for 5 minutes, then transfer to a rack and serve warm.
