This creamy fiesta chicken is loaded with flavor and simple to prepare. It’s perfect served over Spanish rice or tucked into tortillas for tacos or burritos.

I’m Kristin from Yellow Bliss Road, sharing another easy weeknight dinner your family will love. This recipe uses common pantry items—canned tomatoes, corn, black beans, taco and ranch seasonings, onion, garlic, and cream cheese—to create a rich, creamy sauce and tender shredded chicken.

Let the slow cooker do the work

Throw it in. Add the canned ingredients, diced onion, and minced garlic to the bottom of the slow cooker. Place the chicken on top and sprinkle with ranch and taco seasonings.

Cook. Cook on low for 4–6 hours or on high for 3–4 hours. Low heat yields more tender chicken. When the chicken is cooked, shred it directly in the slow cooker. Place the cream cheese on top (don’t mix) and cover for 30 minutes on low so the cream cheese softens.

Stir & serve. Stir the softened cream cheese into the chicken and beans, then serve over rice, in tortillas, with pasta, or on its own.

Instant Pot Instructions

Place all ingredients except the cream cheese in the Instant Pot. Use the poultry setting and set to 5 minutes, then adjust total cooking time to 20 minutes including pressurizing. Allow a natural pressure release, or finish with a manual release if needed. Add the cream cheese, replace the lid to keep the heat in until it softens, then stir and serve.

Great with Mexican rice

This chicken is delicious served over Mexican rice. It also works well with plain rice, in soft tortillas for tacos or burritos, over pasta, or simply spooned onto a plate. It’s a versatile, crowd-pleasing dish you’ll want to make again.

Ingredients

  • 2 lbs boneless skinless chicken breasts (about 2–3 breasts)
  • 1/2 packet dry Ranch dressing mix (about 1 tbsp)
  • 1/2 packet taco seasoning (about 1 tbsp)
  • 10 oz Rotel tomatoes
  • 1 can yellow corn, drained
  • 1 can black beans, drained and rinsed
  • 1/2 medium onion, diced
  • 2 tsp minced garlic
  • 8 oz cream cheese
  • Salt, to taste

Instructions

  • Combine the corn, Rotel, black beans, diced onion, and garlic in the bottom of a slow cooker. Place the chicken on top and sprinkle with taco seasoning and Ranch mix.
  • Cook on low for 4–6 hours or on high for 3–4 hours. Low heat yields more tender chicken.
  • Shred the chicken in the slow cooker. Place the block of cream cheese on top to soften, cover, and cook on low for 30 minutes.
  • Stir in the softened cream cheese until combined. Serve the chicken mixture over Mexican rice, in tortillas, or with pasta.
