I’ve never been a huge casserole fan — most recipes include peppers and onions, which I don’t love — but over the last few years I’ve come around to breakfast casseroles. I help with a local MOPS breakfast buffet every couple of weeks during the school year, and because several members need gluten free options, I’ve developed a few simple crowd-pleasing dishes. This gluten free breakfast casserole is one of my favorites: easy to make, easy to transport, and loved by kids and adults alike.
One morning a friend brought a tater tot casserole with sausage and cheese and it was so popular that I adapted the idea. When I received a package of chicken breakfast sausage links from First Fresh, I knew they would be perfect in this dish. I kept the recipe simple — tater tots, eggs, cheese, and sausage — and added just enough seasoning from the savory sausage. It’s great for brunches, potlucks, or a busy family morning. You can prepare it ahead of time and reheat before serving, and it reheats well for leftovers.

The Tater Tots

I baked this in a CorningWare dish about the size of a 9 x 9 pan. If you want to make a larger 9×13 pan, use the whole bag of tater tots, add a couple of extra eggs and a little more cheese. Feel free to customize: add peppers and onions if you like them, or stir in green onions or herbs for a fresh finish.

Ingredients
- 16-20 ounces of cooked tater tots about half to three-quarters of a bag, enough to cover the bottom of the pan
- 6 eggs whisked with 1/2 teaspoon salt and 1/2 teaspoon pepper
- 1 cup shredded cheese
- 1 package breakfast sausage links approximately 14 ounces, cooked and cut into bite-sized pieces
Instructions
- Preheat oven to 350°F (175°C).
- Layer cooked tater tots in a lightly greased baking dish.
- Scatter the cooked sausage pieces evenly over the tater tots.
- Pour the whisked eggs over the sausage and tater tots, ensuring even coverage.
- Top with shredded cheese.
- Bake 25–30 minutes, until eggs are set and puffed and cheese is melted and lightly golden.
