Chocolate Banana Soft Serve
(Serves 2–3)

- 3 medium bananas, very ripe (for substitutions see nutrition info)
- 1/2 tsp pure vanilla extract
- 1/16 tsp salt
- 3 tbsp cocoa or cacao powder (about 15 g)
- Optional: sweetener to taste, depending on banana ripeness
- Optional: 3–5 tbsp peanut butter or other nut butter for added creaminess
Prepare the bananas ahead by peeling, slicing, and freezing them in a resealable bag. When ready, place the frozen banana chunks, vanilla, salt, and cocoa in a high-powered blender, food processor, or Vita-Mix. If you’re not using a high-powered blender, add 2–3 teaspoons of your preferred milk to help it blend smoothly and, if needed, let the bananas soften slightly. For a firmer ice-cream-like texture, scoop into a container and freeze 10–15 minutes; otherwise serve immediately as soft-serve. Note: this recipe blends best at full quantity—halving may make it harder to process in larger machines.
