How to make paleo chai spiced cookies

In a large bowl, whisk together the almond butter, coconut oil, coconut sugar, egg, and vanilla.

Instructions

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.

  3. In a separate bowl, mix together almond flour and coconut flour.
  4. Add baking soda, cinnamon, ginger, cardamom, cloves, and salt to the dry ingredients.
  5. Pour the dry ingredients into the wet and stir until combined.
  6. Fold in the mini white chocolate chips.
  7. Refrigerate the dough for at least 30 minutes to firm up.
  8. Scoop about 2 tablespoons of dough per cookie onto the prepared baking sheet and press down slightly.
  9. Bake for 12–14 minutes, then let cool completely on a wire rack.
  10. Optional: sprinkle a little sea salt on top before or after baking for contrast.
  11. Store at room temperature for up to a week or freeze for longer storage.

Notes

If you prefer, use 2 teaspoons of a prepared chai spice blend in place of the individual spices.
