Tin foil meals are especially handy: easy to assemble, versatile, and simple to cook over coals or on a grill. When I discovered Jesseca’s cookbook focused on foil-cooked meals, it felt like the perfect resource to expand my campfire repertoire. The recipes translate well to an oven or outdoor grill too, so you’ll use them even when you’re not camping.

Hot Ham and Cheese Sandwiches are a classic, but I never thought to make them on the campfire until I saw this tin-foil version. On one evening outing I set out to make them and discovered the stores were out of Hawaiian rolls, so I used regular dinner rolls instead. They turned out fantastic either way, so feel free to use what you have on hand.
The method is delightfully simple. I carried a small cast iron pan to melt the butter, then assembled the sandwiches directly on heavy-duty foil. After pouring the butter mixture over the sandwiches and sealing each packet, I placed them on warm coals and turned the packets occasionally. In about 10–15 minutes the cheese was melted and the rolls were lightly toasted. Cleanup was quick—one of the best parts of foil-cooked meals when you’re outdoors.

Hot Ham and Cheese Campfire Sandwiches

- 1 lb deli-sliced ham
- 12 Hawaiian rolls (or dinner rolls)
- 12 slices Swiss or Provolone cheese
- 1/2 cup butter melted
- 1 1/2 tablespoons Dijon mustard
- 1 tablespoon dried onion
- 1 tablespoon brown sugar
Instructions

Prepare six sheets of heavy-duty foil.

Split the rolls and divide the ham among the 12 bottoms. Top each with a slice of cheese, then replace the roll tops. Place two sandwiches on each piece of foil.

Whisk together the melted butter, Dijon, dried onion, and brown sugar. Spoon or pour the mixture evenly over the tops of the sandwiches.

Fold the foil up around each pair of sandwiches and seal the packets. Place the packets on warm campfire coals and cook, turning frequently, until the cheese melts and the rolls are lightly toasted, about 10–15 minutes.
